Makes about 20

Healthy Recipe Pikelets 1 cup self-raising flour

pinch of salt

2 tablespoons sugar

1 egg

1 cup milk

2 tablespoons butter

1 teaspoons golden syrup

a little oil or butter for greasing

1. Sift the flour and salt into a bowl and add the sugar. Beat the egg and milk together and stir into the flour.

2. Melt the butter and golden syrup together in a saucepan. Stir over a low heat until all the butter is melted, then add to the mixture.

3.Grease a shallow frypan with a little oil or butter and when hot, drop in the batter in spoonfuls (about a tablespoon), a little apart. Cook over a medium heat until the underside is browned and small bubbles appear on the surface, then turn and brown the other side. Serve warm with butter or cold with jam and whipped cream.
